Banana Cream Pie: So Apeeling

Lucky for me, I was able to check off all the above last weekend #success. My very pregnant sister has been craving Banana Cream Pie for months now so naturally, her baby shower included all the deliciousness that is this beauty…

We celebrated the little gal that is busy punching around in my sister’s baby bump the best way we know how: mimosas and breakfast pizza. Because the only meal I enjoy more than dessert is brunch (duh). But don’t worry, this brunch coincidentally included dessert.

Between writing hilarious jokes on diapers and bringing everyone to tears with an adorable video, we found ourselves indulging in this fabulous pie. Not that I’m trying to bribe my future niece to like me…but yes, yes I am.

Drool-Worthy Banana Cream Pie

Pie ingredients:

1 1/2 cups graham cracker crumbs
6-8 tbsp melted butter
3/4 cup sugar
1/4 cup cornstarch
2 cups half and half
4 egg yolks
3 tbsp butter
1 1/2 tsp vanilla extract
2 bananas, sliced

Whipped topping ingredients:

2 cups heavy whipping cream
1/2 cup sugar
1/2 tsp vanilla


Make the crust: Preheat oven to 375 degrees. In a small bowl, combine graham cracker crumbs and melted butter. Mix until it is well blended. Press into your pie pan and place in the freezer for about 10 minutes. This firms up the crust and prevents crumbling when slicing the pie. Once it is frozen, bake the crust for 8-10 minutes. Allow to cool completely before filling.

Make the filling: In a medium saucepan, combine sugar and cornstarch. Add half and half and egg yolks and whisk until well combined. Bring to boil over medium heat, stirring constantly. Boil 1 minute and remove from heat. Stir in butter, and vanilla. Pour 1/2 of the filling into the crust, then cover with sliced bananas. Pour the rest of the filling over the bananas, and cover with plastic wrap. Press plastic wrap directly on the filling itself to avoid a film on top. Chill pie for at least 3 hours, then top with another layer of sliced bananas.

Make the whipped cream: In a medium mixing bowl, beat whipping cream at high speed. Gradually add sugar and vanilla. Beat until stiff peaks form. Spread whipped cream over the bananas and garnish with a few more slices of bananas–cause it needs to be insta-worthy. Then watch your friends devour your creation.
