Simple Lemon Berry Pie

Has anyone who says: “easy as pie” ever actually made a pie?

Because if so, they’d know it’s anything but easy. It’s time consuming and messy and tiring and…absolutely delicious.

But for real, a lot of recipes can be seriously hard work.

Except this one…

  1. It uses a sugar cookie style crust—so there is no need for a rolling pin
  2. You only need four ingredients for the filling
  3. It’s a no-bake filling so it’s ready to serve in no time

The mixed berry topping makes it a gorgeous pie. Whipped up this beauty for a friend’s birthday celebration and it was a showstopper.

Plus, the lemon mascarpone filling is super light so you could totally eat the whole pie by yourself two slices.

I mean, it’s basically a fruit salad. So eating two slices is obviously the healthy thing to do.

Simple Lemon Berry Pie

Crust Ingredients

2 cups unbleached all-purpose flour
1/4 tsp salt
1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar
1 tsp vanilla extract

Filling Ingredients

16 oz mascarpone cheese
1/4 cup powdered sugar
1 tsp fresh lemon juice
1 tsp finely grated lemon zest (plus more for garnish)
1 tsp vanilla extract
1 lb fresh berry medley


Prep the crust: In a small bowl, mix flour and salt. In a separate large bowl, use a hand mixer to cream butter and sugar. Once fluffy, mix in the vanilla. Lower speed and slowly beat in the flour mixture until just incorporated. Shape dough into a ball and wrap in plastic wrap. Refrigerate for 30 minutes.

Preheat oven to 350 degrees. Once the dough has chilled, press evenly into your pie pan, flattening the edges along the rim. Bake for 15-20 minutes, or until edges begin to lightly brown. Set aside to cool.

Make the filling: In a medium bowl, combine mascarpone, sugar, lemon juice, and vanilla. Mix until smooth. Spread mixture evenly in cooled pie crust. Top with an assortment of berries in the design of your choice. Garnish with lemon zest over top.

Refrigerate for 30 minutes to set before slicing and serving. Enjoy!
