St. Patrick’s Day Mint Pie

As a kid I looked forward to St. Patrick’s Day solely for the McDonald’s mint shamrock shakes. I’m a fan all things mint—mojitos, thin mints, this pie…

The problem was…shamrock shakes aren’t sold at every McDonald’s. So it was essentially a month long scavenger hunt. With no clues.

But because people are lazy there’s an app for everything, this year there’s a McDonald’s Shamrock Shake Finder. Kids these days…they don’t understand the struggle of the shamrock shake search.

So instead of going to McDonald’s, I created a pie version of the beloved shamrock shake. Which basically means it’s a mint pie.

With a mint Oreo crust. Because mint Oreos are the best Oreos.

And the best part is this pie could not be easier to make. Add ice cream, some whipped cream, throw a few sprinkles on top, and call it a day!

St. Patrick’s Day Mint Ice Cream Pie

Ingredients

20 mint Oreo cookies
3 tbsp butter, melted
1 quart mint chocolate chip ice cream, softened
2 cups heavy whipping cream
1/2 cup sugar
1/2 tsp vanilla

Directions

Make the crust: In a food processor, crush Oreo cookies. Add butter and process until combined. Press crumbled cookies into your pie plan. Freeze for 10 minutes.

Prepare the pie: Spread the softened ice cream into bottom of the frozen crust. Freeze for at least 2-3 hours or until firm. Remove pie from freezer 10 minutes before ready to serve.

Make the whipped cream: In a medium mixing bowl, beat whipping cream at high speed. Gradually add sugar and vanilla. Beat until stiff peaks form. Top the pie with whipped cream and add green sprinkles.

Happy (early) St. Patrick’s Day!

I have a pie contest I will enter on FRIDAY. I work with some mathematicians and they said this Friday is PIE Day 3.14 (They told me the joke and it took me a minute to get it). Anyway, I may make this for their pie contest. Wish me luck!!!

    1. Yes, Pi Day is March 14th 🙂 One of my favorite holidays. Good luck with the contest! I have lots of recipes if you need any help choosing a pie (some on the really easy side, some a bit more difficult). But this one would be a delicious option!

What are your easy recipes you suggest!

      2. This mint pie is super easy, but might be hard to bring into the office since it should stay frozen. A few other options are: banana cream pie (https://piesbeforeguys.com/2017/03/02/%EF%BB%BFbanana-cream-pie-so-apeeling/), lemon berry pie (https://piesbeforeguys.com/2018/02/27/simple-lemon-berry-pie/), and s’mores pie (https://piesbeforeguys.com/2017/09/08/simple-smores-pie/). They are all pretty easy too!!

Thanks. I actually did an apple pie for the contest. I didn’t win. Store bought pies beat mine. I will try these and work on my Pie game!!!

  2. WHAT. This looks amazing and your photos are gorgeous. P.S. A shamrock shake finder on the app?! That is too much.
