Lavender Simple Syrup

Living in 2020 has really upped my cocktail game (and ignited my inner wannabe mixologist). My happy hours very quickly went from trendy cocktail bars to leggings on the couch.

So naturally I made the couch my very own trendy cocktail bar. Without a doubt I have made more cocktails in the past 4 months than in my entire life. Before 2020, I was very much a wine gal at home (with the occasional White Claw). But today I’m a — spicy watermelon margarita, white claw slushy, fancy aperol spritz, strawberry tequila soda — gal.

Now that I’m an amateur mixologist, I must tell you what separates a cocktail guru from an everyday happy hour drinker: homemade simple syrup. Once you dive into this simple syrup business you’ve officially entered the next level.

The craziest part is…making simple syrup is SO EASY. And unless you’re still living in a dorm room or have a broken water line, I guarantee you have the ingredients on hand to make it. At the bare minimum, you literally need equal parts water and sugar.

Today, because we’re channeling our inner trendy Chicago cocktail bar, we’re also adding dried lavender. If you remember, I started experimenting with lavender when I made frozen lavender blueberry mini pies and it turned out wonderfully.

This simple syrup is the perfect addition to any cocktail. It adds a nice floral flavor that elevates your drink. It will last for about a month in the fridge, so make a batch, seal it in container or squirt bottle, and save it for all your cocktail needs.

Oh and give it a try in a Lavender French 75 – you won’t be disappointed.
