Ingredients
  

  • 2 cloves of garlic, minced
  • 1/2 teaspoon salt
  • 1/2 cup extra virgin olive oil
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • Pinch of pepper

Instructions
 

  • First, chop the garlic cloves into small pieces and then toss them with salt. This helps bring out the tastes of the garlic.
  • Whisk together the egg yolk, lemon juice, and garlic-salt mixture in a food processor or blender.
  • Blend on low speed until the mixture thickens and emulsifies, then gradually add the olive oil in a steady stream.
  • Add a dash of pepper and taste and adjust the salt. When you're ready to use the aioli, transfer it to a serving bowl and keep it chilled.
