Cheesecake has roots as far back as Ancient Greece, where it was served to athletes during the first Olympic Games. Later, the Romans added their twist, spreading its popularity across Europe. In the 19th century, the addition of cream cheese gave us the cheesecake we know and love today.

Equipment

  • Mixing bowls

Ingredients
  

Crust:

  • 1 cup graham cracker crumbs (or digestive biscuits)
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

Filling:

  • 16 oz (450 g) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Optional Toppings:

  • Fresh berries
  • Chocolate drizzle
  • Whipped cream

Instructions
 

  • Step 1: Prepare the Crust
    In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar.
    Mix until the texture resembles wet sand.
    Press the mixture evenly into the bottom of a 6-inch springform pan. Use the back of a spoon or a flat-bottomed glass to compact it.
    Place the crust in the freezer while you prepare the filling.
  • Step 2: Make the Filling
    In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
    Add the eggs, one at a time, mixing well after each addition.
    Stir in the sour cream, vanilla extract, and flour. Mix until fully combined, ensuring there are no lumps.
  • Step 3: Assemble the Cheesecake
    Pour the filling over the chilled crust, spreading it evenly with a spatula.
    Lightly tap the pan on the counter to release any air bubbles.
  • Step 4: Cook in the Air Fryer
    Preheat your air fryer to 300°F (150°C).
    Place the springform pan in the air fryer basket or tray.
    Cook for 30-35 minutes. The edges should be set, and the center should jiggle slightly when shaken.
    Once done, carefully remove the pan and let it cool to room temperature.
  • Step 5: Chill and Serve
    Cover the cheesecake with plastic wrap or foil and refrigerate for at least 4 hours (preferably overnight).
    Remove from the springform pan and add your favorite toppings before serving.
