Ingredients
  

  • 4 large bell peppers (any color, stems and seeds removed)
  • 1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)
  • 1 pound ground meat (beef, turkey, or plant-based alternative)
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup marinara sauce (plus extra for topping)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil

Instructions
 

  • Prepare the Peppers:
    Slice the tops off the bell peppers and remove the seeds and membranes. Rinse and pat dry.
  • Cook the Filling:
    Heat a skillet over medium heat and cook the ground meat until browned. Add the diced onion and minced garlic, cooking for another 3-4 minutes until softened.
    Stir in the cooked rice, marinara sauce, Italian seasoning, paprika, salt, and black pepper. Mix well and let it simmer for 2-3 minutes.
  • Stuff the Peppers:
    Fill each bell pepper generously with the prepared filling. Press it down lightly to ensure the peppers are well-packed.
  • Top with Cheese:
    Sprinkle shredded cheese over the stuffed peppers for a gooey, melty finish.
  • Cook in the Air Fryer:
    Preheat your air fryer to 375°F (190°C) for 3 minutes.
    Lightly spray the air fryer basket with cooking spray. Arrange the stuffed peppers upright in the basket.
    Cook for 12-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.
  • Serve and Enjoy:
    Carefully remove the peppers from the air fryer. Serve hot with an extra drizzle of marinara sauce if desired.
