Ingredients
  

  • 2 pounds tripe (cleaned and cut into bite-sized pieces)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cans hominy (drained and rinsed)
  • 1 can diced tomatoes
  • 1/4 cup chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Garnishes: chopped cilantro, lime wedges, chopped green onions

Instructions
 

  • Start by cleaning and preparing the tripe. Boil it for about 15-20 minutes to remove excess fat.
  • In a large stockpot, sauté onions and garlic until golden brown.
  • Add tripe, hominy, diced tomatoes, chili powder, oregano, salt, and pepper.
  • Pour enough water to cover the ingredients and bring the mixture to a boil.
  • Reduce heat and simmer for 2-3 hours until the tripe is tender.
  • Serve hot, garnished with cilantro, lime wedges, and green onions.
