- 2 pounds tripe (cleaned and cut into bite-sized pieces)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 2 cans hominy (drained and rinsed)
- 1 can diced tomatoes
- 1/4 cup chili powder
- 1 teaspoon oregano
- Salt and pepper to taste
- Garnishes: chopped cilantro, lime wedges, chopped green onions
Start by cleaning and preparing the tripe. Boil it for about 15-20 minutes to remove excess fat.
In a large stockpot, sauté onions and garlic until golden brown.
Add tripe, hominy, diced tomatoes, chili powder, oregano, salt, and pepper.
Pour enough water to cover the ingredients and bring the mixture to a boil.
Reduce heat and simmer for 2-3 hours until the tripe is tender.
Serve hot, garnished with cilantro, lime wedges, and green onions.
