Ingredients
  

For the Bowl:

  • 1 cup long-grain white or brown rice
  • 2 cups water or chicken broth
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (canned, fresh, or frozen)
  • 1 cup chopped romaine lettuce
  • 1 cup diced tomatoes (or salsa)
  • 1/2 cup diced red onions
  • 1 avocado, sliced or diced

For the Protein:

  • 1 lb chicken breast, shrimp, steak, or tofu
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste

For the Toppings (Optional):

  • 1/4 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for garnish

Instructions
 

  • Prepare the Rice
    Rinse the rice under cold water to remove excess starch.
    In a medium saucepan, combine rice, water or broth, olive oil, salt, cumin, and chili powder.
    Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes (or according to the rice package instructions).
    Fluff the cooked rice with a fork and set aside.
  • Cook the Protein
    While the rice cooks, heat 1 tbsp olive oil in a skillet or grill pan over medium heat.
    Season your protein choice (chicken, shrimp, steak, or tofu) with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  • Assemble the Bowl
    Start with a base layer of rice in each bowl.
    Add black beans and corn.
    Top with chopped romaine lettuce, diced tomatoes, and red onions.
    Arrange the cooked protein and avocado slices on top.
    Add optional toppings like cheese, sour cream, cilantro, and a squeeze of lime juice.
