- 2 cups of roasted peanuts
- 1 cup of granulated sugar
- 1/2 cup of unsalted butter
- 1/4 cup of water
- 1/4 teaspoon of salt
- 1/2 teaspoon of vanilla extract
- 1/4 teaspoon of baking soda
Begin by lining a baking sheet with parchment paper and set it aside.
In a heavy-bottomed saucepan, combine the sugar, butter, water, and salt. Heat the mixture over medium heat, stirring continuously until the sugar dissolves and the butter melts.
Once the mixture is smooth, insert a candy thermometer and bring it to a boil. Continue to cook until the temperature reaches 300°F (hard crack stage). This should take about 10-15 minutes.
Remove the saucepan from heat, and carefully stir in the vanilla extract and baking soda. Be cautious as the mixture will bubble up.
Add the roasted peanuts and stir vigorously, ensuring all the peanuts are coated with the toffee mixture.
Quickly pour the mixture onto the prepared baking sheet. Use a wooden spoon to spread it out evenly. Allow it to cool and harden for about 15-20 minutes.
Once the toffee has completely cooled, break it into bite-sized pieces.
