Ingredients
  

  • 2 cups of roasted peanuts
  • 1 cup of granulated sugar
  • 1/2 cup of unsalted butter
  • 1/4 cup of water
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of vanilla extract
  • 1/4 teaspoon of baking soda

Instructions
 

  • Begin by lining a baking sheet with parchment paper and set it aside.
  • In a heavy-bottomed saucepan, combine the sugar, butter, water, and salt. Heat the mixture over medium heat, stirring continuously until the sugar dissolves and the butter melts.
  • Once the mixture is smooth, insert a candy thermometer and bring it to a boil. Continue to cook until the temperature reaches 300°F (hard crack stage). This should take about 10-15 minutes.
  • Remove the saucepan from heat, and carefully stir in the vanilla extract and baking soda. Be cautious as the mixture will bubble up.
  • Add the roasted peanuts and stir vigorously, ensuring all the peanuts are coated with the toffee mixture.
  • Quickly pour the mixture onto the prepared baking sheet. Use a wooden spoon to spread it out evenly. Allow it to cool and harden for about 15-20 minutes.
  • Once the toffee has completely cooled, break it into bite-sized pieces.
