  • 1 pre-made pie crust (or homemade if you prefer)
  • 1 cup heavy cream
  • 1 cup brown sugar (packed)
  • ½ cup unsalted butter
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 3 large egg yolks
  • 2 cups whole milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Prepare the Filling:
    In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar until it dissolves and starts bubbling. Gradually add the milk and cream while stirring continuously. In a separate bowl, whisk the egg yolks, cornstarch, and salt until smooth. Slowly pour the egg mixture into the saucepan while whisking constantly.
  • Cook to Perfection:
    Continue cooking the mixture over medium heat, stirring gently, until it thickens and coats the back of a spoon. Remove from heat and stir in the vanilla extract. Let the filling cool slightly.
  • Into the Pie Crust:
    Pour the luscious butterscotch filling into the pre-made pie crust, spreading it evenly. Smooth the top with a spatula.
  • Chill and Serve:
    Cover the pie with plastic wrap, making sure it touches the surface to prevent a skin from forming. Refrigerate for at least 4 hours or until set. Once chilled, slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream.
