Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 packages (32 ounces) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup all-purpose flour
  • Zest of 4 key limes
  • 1/3 cup key lime juice

Instructions
 

  • Prepare the Crust:
    Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  • Preheat Oven:
    Set your oven to 325°F (163°C).
  • Make the Filling:
    Beat cream cheese, sugar, and vanilla until smooth.Add eggs one at a time, incorporating each fully before adding the next.Mix in sour cream, flour, key lime zest, and juice until well combined.
  • Bake:
    Pour the mixture over the crust and smooth the top.Bake for about 55-60 minutes or until the center is set.
  • Chill:
    Allow the cheesecake to cool, then refrigerate for at least 4 hours or overnight.
