Chicken wings, as a specific dish, became famous in Buffalo, New York, in the 1960s. The “Buffalo wings” were created at the Anchor Bar by Teressa Bellissimo, who fried the wings and tossed them in a tangy hot sauce.

Ingredients
  

  • 2 lbs (1 kg) chicken wings, split into drumettes and flats
  • 1 tbsp baking powder (for crispy skin)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp cayenne pepper (optional, for heat)
  • 2 tbsp olive oil

For the Sauce (optional)

  • Buffalo Sauce:½ cup hot sauce (e.g., Frank's RedHot)
  • 3 tbsp unsalted butter
  • 1 tbsp honey (optional for a hint of sweetness)
  • Honey Garlic Sauce:¼ cup honey
  • 2 tbsp soy sauce
  • 2 garlic cloves, minced

Instructions
 

  • Prepare the Chicken Wings
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup. Place a wire rack on the baking sheet if you have one.
  • Pat the chicken wings dry with paper towels to remove excess moisture—this helps achieve crispy skin.
  • Season the Wings
    In a large bowl, toss the chicken wings with olive oil to coat evenly.
  • Mix baking powder, salt, pepper, garlic powder, paprika, and cayenne (if using) in a small bowl. Sprinkle the seasoning mix over the wings and toss until fully coated.
  • Bake the Wings
    Arrange the wings in a single layer on the wire rack or directly on the baking sheet. Make sure they are not touching for even cooking.
  • Bake for 40–45 minutes, flipping halfway through to ensure both sides are crispy and golden brown.
  • Prepare the Sauce (Optional)
    While the wings bake, prepare your desired sauce. For Buffalo sauce, melt butter in a small saucepan, then stir in hot sauce and honey. For honey garlic sauce, combine honey, soy sauce, and garlic in a saucepan and simmer until slightly thickened.
  • Toss and Serve
    Once the wings are done, transfer them to a clean bowl and pour the sauce over (if using). Toss the wings until they are fully coated.
  • Serve immediately with celery sticks, carrot sticks, and a side of ranch or blue cheese dressing.
