Ingredients
  

  • Corn tortillas (fresh or stale)
  • Cooking oil (preferably vegetable or canola oil)
  • Red or green salsa (homemade or store-bought)
  • Eggs
  • Optional toppings: shredded chicken, crumbled queso fresco, diced onions, chopped cilantro, sour cream, avocado slices, and lime wedges for garnish

Instructions
 

  • Cut corn tortillas into triangles or strips to prepare the tortilla chips. You can also roast them until crispy in the oven.
  • Cook Eggs: Depending on your taste, cook scrambled or fried eggs on a skillet.
  • Tortilla chips should be sautéed by heating up some oil in a skillet and frying them until brown and crispy. Use paper towels to absorb surplus oil.
  • Mix the ingredients together: Over the crisp tortilla chips on the skillet, drizzle salsa. Add the scrambled eggs and any additional toppings. Gently stir until everything is well combined and cooked.
  • To serve, move the chilaquiles to a dish. Add other toppings, such as cheese, avocado, sour cream, onions, cilantro, and lime wedges, as garnish.
