Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce (canned)
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • The chipotle peppers, minced garlic, olive oil, ground cumin, dried oregano, salt, and pepper should all be combined in a blender or food processor.
  • Blend the marinade until it's smooth.
  • Pour the chipotle marinade over the chicken breasts in a mixing bowl, making sure to coat them completely.
  • Refrigerate the marinade for at least 30 minutes (marinating overnight can intensify the flavors).Turn the heat up to medium-high on your stovetop pan or grill. To keep it from sticking, lightly oil the grill or pan.
  • The marinated chicken breasts should be cooked for 6–7 minutes on each side, or until a meat thermometer registers 165°F inside the chicken.
  • After cooking, take the chicken off of the pan or grill and let it to rest for a few minutes before slicing.
  • Garnish with fresh cilantro and serve hot with your choice of sides like rice, roasted vegetables, or a fresh salad.
