- 5 tablespoons cornstarch
- ¼ teaspoon salt
- 5 large egg yolks
- 2 cups whole milk
- 1 cup heavy cream
- 6 ounces bittersweet chocolate (finely chopped)
- 4 tablespoons unsalted butter (cut into pieces)
- 1 ½ teaspoons vanilla extract
Prepare the Crust: Use your favorite homemade pie crust or a store-bought one. Bake and cool it completely.
Make the Chocolate Filling:In a saucepan, whisk together sugar, cornstarch, and salt. Gradually add milk and egg yolks, stirring until well blended.
Cook the mixture over medium heat, stirring constantly, until it thickens and boils.Remove from heat and add the chopped bittersweet chocolate, butter, and vanilla. Stir until smooth.
Assemble the Pie: Pour the chocolate filling into the baked pie crust.Let it cool slightly, then refrigerate for at least 4 hours or until set.
