Chocolate pudding, as we know it today, has its roots in 19th-century American and European cuisine. It was originally a custard-like dish made by blending chocolate with eggs, cream, and sugar. Over time, the recipe evolved to use cornstarch as a thickening agent, making it quicker and easier to prepare without sacrificing the velvety texture.

- 1/4 cup unsweetened cocoa powder
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 2 3/4 cups whole milk
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Whipped cream or chocolate shavings for garnish (optional)
In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt until all the dry ingredients are well combined. This step helps ensure there are no lumps in your pudding later.
Gradually pour in the milk while whisking constantly to blend with the dry ingredients. Continue whisking until everything is smooth.
Place the saucepan over medium heat and cook the mixture, stirring constantly. As the mixture heats, it will start to thicken. Make sure to scrape the sides and bottom of the saucepan to prevent sticking or burning.
Continue to cook and stir until the pudding begins to boil. Once you see bubbles breaking on the surface, cook for another 1-2 minutes to ensure the cornstarch is fully activated and the pudding reaches the right thickness.
Take the saucepan off the heat and stir in the butter and vanilla extract. The butter adds richness, while the vanilla enhances the flavor of the chocolate. Stir until the butter is completely melted and incorporated.
Pour the hot pudding into individual serving bowls or ramekins. To prevent a skin from forming on top, press a piece of plastic wrap directly onto the surface of each pudding. Allow the puddings to cool slightly, then refrigerate them for at least 2 hours to set.
Once chilled, remove the plastic wrap and serve your chocolate pudding as is or garnish with whipped cream, chocolate shavings, or fresh berries for an extra touch. Enjoy!
