Ingredients
  

  • 1 pound ground pork
  • 2 tablespoons smoked paprika
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red pepper flakes (optional, for extra spice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons red wine vinegar

Instructions
 

  • Mix the Spices: In a large mixing bowl, combine smoked paprika, paprika, garlic powder, onion powder, dried oregano, ground cumin, ground coriander, red pepper flakes, salt, and black pepper. Mix well to ensure the spices are evenly distributed.
  • Combine with Pork: Add the ground pork to the bowl with the spices. Pour in the red wine vinegar. Using your hands or a wooden spoon, mix everything thoroughly until the pork is well-coated with the spice mixture.
  • Form the Sausage: If you want to make sausage links, you can stuff the mixture into casings at this stage. For loose chorizo, you can skip this step.
  • Cook the Chorizo: Heat a skillet or frying pan over medium-high heat. Add the chorizo mixture to the pan, breaking it up with a wooden spoon or spatula. Cook for about 10-15 minutes, stirring occasionally, until the pork is fully cooked and browned.
  • Serve: Once cooked, your homemade chorizo is ready to be enjoyed. Serve it as a main dish, in tacos, with eggs, or as part of a larger meal.
