Coconut rice has roots in several cultures, each adding its unique twist. In Southeast Asia, particularly in countries like Thailand and Malaysia, coconut rice is a staple often enjoyed with spicy dishes. In the Caribbean, it's a beloved side dish often served with jerk chicken or fish. In West Africa, especially in Nigeria and Ghana, coconut rice is a festive dish, often prepared for special occasions and celebrations.

Ingredients
  

  • 2 cups of long-grain rice (preferably basmati or jasmine)
  • 1 can (400 ml) of coconut milk
  • 1 1/2 cups of water
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of vegetable oil or coconut oil
  • 1 teaspoon of salt
  • Fresh herbs for garnish (optional, such as cilantro or parsley)

Instructions
 

  • Rinse the Rice: Start by rinsing the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky.
  • Prepare the Aromatics: Heat the oil in a large saucepan over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic (and grated ginger if using) and sauté for another minute until fragrant.
  • Cook the Rice: Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and aromatics. Cook for about 2 minutes, allowing the rice to toast slightly.
  • Add Liquid: Pour in the coconut milk, water, and salt. Stir well to combine all ingredients he ingredients.
  • Bring to a Boil: Increase the heat to high and bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 18-20 minutes. Do not lift the lid during this time to ensure even cooking.18–20
  • Check the Rice: After 18-20 minutes, remove the lid and check if the rice is cooked and the liquid is absorbed. If the rice is still a bit firm, add a little more water (about 1/4 cup) and continue to cook for another 5 minutes.18–20
  • Fluff and Serve: Once the rice is fully cooked, fluff it with a fork. If desired, stir in peas, diced carrots, or shredded coconut at this stage. Garnish with fresh herbs before serving.
