Ingredients
  

  • 1 lb fresh cod fillets
  • 4 slices of bacon, chopped
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 3 potatoes, peeled and diced
  • 2 cups corn kernels (fresh or frozen)
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot over medium heat, cook the chopped bacon until crispy.
  • Add diced onions and minced garlic to the pot. Sauté until onions are translucent.
  • Stir in diced potatoes and corn, cooking for an additional 5 minutes.
  • Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce heat and simmer until the potatoes are tender.
  • Add cod fillets, milk, and heavy cream. Cook for an additional 5-7 minutes until the fish is flaky.
  • Season with salt and pepper to taste. Garnish with fresh parsley.
