- 1 lb fresh cod fillets
- 4 slices of bacon, chopped
- 1 onion, finely diced
- 2 cloves garlic, minced
- 3 potatoes, peeled and diced
- 2 cups corn kernels (fresh or frozen)
- 4 cups chicken or vegetable broth
- 1 cup whole milk
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
In a large pot over medium heat, cook the chopped bacon until crispy.
Add diced onions and minced garlic to the pot. Sauté until onions are translucent.
Stir in diced potatoes and corn, cooking for an additional 5 minutes.
Pour in the chicken or vegetable broth, bringing the mixture to a gentle boil. Reduce heat and simmer until the potatoes are tender.
Add cod fillets, milk, and heavy cream. Cook for an additional 5-7 minutes until the fish is flaky.
Season with salt and pepper to taste. Garnish with fresh parsley.
