Ingredients
  

Fresh Ingredients:

  • 1 cup fresh corn kernels (or canned/frozen, drained and thawed)

  • 2 large eggs

Dry Ingredients:

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Liquid Ingredients:

  • 1/3 cup milk
  • 1 tablespoon melted butter or vegetable oil

For Frying:

  • 1/4 cup vegetable oil

Instructions
 

  • Mix the Dry Ingredients
    In a large bowl, whisk together the flour, baking powder, salt, paprika, and black pepper. This ensures the seasonings are evenly distributed.
  • Combine the Wet Ingredients
    In a separate bowl, beat the eggs lightly. Add the milk and melted butter, whisking until well combined.
  • Create the Batter
    Gradually pour the wet ingredients into the dry ingredients, mixing gently to form a thick batter. Be careful not to overmix.
  • Fold in the Corn and Onions
    Gently fold in the corn kernels and chopped green onions. This ensures the fritters are packed with flavor in every bite.
  • Heat the Oil
    Place a large skillet over medium heat and add the vegetable oil. Let it heat up until it shimmers.
  • Fry the Fritters
    Scoop 2 tablespoons of batter per fritter into the hot oil. Flatten them slightly with the back of your spoon or spatula. Cook for 2–3 minutes on each side, or until golden brown and crispy.
  • Drain Excess Oil
    Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  • Serve and Enjoy
    Serve the fritters warm, with dipping sauces like sour cream, salsa, or sweet chili sauce. They also pair well with a simple salad or fresh guacamole.
