- 2 Cornish hens
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh herbs for garnish (optional)
Turn the oven on to 375°F, or 190°C. To make a marinade, add olive oil, minced garlic, paprika, rosemary, thyme, and salt & pepper in a small bowl.U
Using paper towels, pat the Cornish hens dry before generously coating them with the marinade mixture.
To add more taste, place the lemon slices within the birds' cavities.
After moving the chickens to a baking dish, roast them in the preheated oven for approximately one hour, or until a kitchen thermometer registers 165°F (74°C) inside the chickens.
After cooking, take the hens out of the oven and give them a five to ten minute rest before serving. If preferred, garnish with fresh herbs and serve hot.
