Ingredients
  

  • 2 Cornish hens
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 lemon, sliced
  • Fresh herbs for garnish (optional)

Instructions
 

  • Turn the oven on to 375°F, or 190°C. To make a marinade, add olive oil, minced garlic, paprika, rosemary, thyme, and salt & pepper in a small bowl.U
  • Using paper towels, pat the Cornish hens dry before generously coating them with the marinade mixture.
  • To add more taste, place the lemon slices within the birds' cavities.
  • After moving the chickens to a baking dish, roast them in the preheated oven for approximately one hour, or until a kitchen thermometer registers 165°F (74°C) inside the chickens.
  • After cooking, take the hens out of the oven and give them a five to ten minute rest before serving. If preferred, garnish with fresh herbs and serve hot.
