Egg bites gained widespread popularity with the introduction of sous vide egg bites at coffee chains like Starbucks. The sous vide method, which involves cooking food in a water bath at a precise temperature, results in incredibly tender and fluffy egg bites.

Ingredients
  

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup cooked bacon, diced (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • Cooking spray

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly spray the muffin tin or silicone molds with cooking spray to prevent sticking.
  • In a blender or food processor, combine the eggs and cottage cheese. Blend until smooth and well-mixed. This will give the egg bites a creamy texture.
  • In a mixing bowl, combine the shredded cheese, diced bacon (if using), bell peppers, and spinach. You can customize the mix-ins based on your preferences.
  • Pour the egg mixture into the mixing bowl with the mix-ins. Add salt and pepper to taste, then gently whisk to combine everything evenly.
  • Pour the egg mixture into the prepared muffin tin or silicone molds, filling each about three-quarters full. This allows room for the egg bites to puff up as they cook.
  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and lightly golden on top. A toothpick inserted into the center should come out clean.
  • Allow the egg bites to cool in the tin for a few minutes before removing them. Serve warm, or let them cool completely and store in an airtight container in the refrigerator for up to 5 days.
