Pour the egg mixture into the mixing bowl with the mix-ins. Add salt and pepper to taste, then gently whisk to combine everything evenly.
Pour the egg mixture into the prepared muffin tin or silicone molds, filling each about three-quarters full. This allows room for the egg bites to puff up as they cook.
Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and lightly golden on top. A toothpick inserted into the center should come out clean.
Allow the egg bites to cool in the tin for a few minutes before removing them. Serve warm, or let them cool completely and store in an airtight container in the refrigerator for up to 5 days.
