Ingredients
  

  • 2 cups cooked and shredded chicken (or your preferred filling)
  • 1 cup diced onions
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 12 corn tortillas
  • 2 cups enchilada sauce
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions
 

  • Start by Preheating the oven to 375°F (190°C).
  • Next, In a skillet, sauté onions until translucent.
  • Now, Add your shredded chicken and cook until browned.
  • Place warm tortillas in a dry skillet to make them pliable.
  • Spoon a generous portion of the chicken mixture onto each tortilla, roll them up, and place seam-side down in the baking dish.
  • Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.B
  • Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Drizzle with sour cream and garnish with fresh cilantro.
