Ingredients
  

  • 4 large green tomatoes, sliced into
  • 1/4-inch rounds
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs or cornmeal
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions
 

  • Assemble a breading station with three shallow dishes: one with beaten eggs, one with seasoned flour, and one with cornmeal or breadcrumbs.
  • Each tomato slice is dipped in flour and any excess is shaken off. The tomato slices should then be dipped into the beaten eggs, letting any excess drop off.
  • Lightly press the cornmeal or breadcrumbs onto the tomatoes to ensure they stick.
  • In a big skillet, heat the vegetable oil over medium heat until it's hot but not smoking.
  • Working in stages to prevent packing the skillet too full, carefully drop the breaded tomato slices into the heated oil.
  • The tomatoes should be crispy and golden brown after 2 to 3 minutes of cooking on each side.
  • After taking out of the skillet, drain the fried green tomatoes using paper towels to remove excess oil.
    Serve hot, garnished with a sprinkle of salt if desired.
