- 4 large green tomatoes, sliced into
- 1/4-inch rounds
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs or cornmeal
- Salt and pepper to taste
- Vegetable oil for frying
Assemble a breading station with three shallow dishes: one with beaten eggs, one with seasoned flour, and one with cornmeal or breadcrumbs.
Each tomato slice is dipped in flour and any excess is shaken off. The tomato slices should then be dipped into the beaten eggs, letting any excess drop off.
Lightly press the cornmeal or breadcrumbs onto the tomatoes to ensure they stick.
In a big skillet, heat the vegetable oil over medium heat until it's hot but not smoking.
Working in stages to prevent packing the skillet too full, carefully drop the breaded tomato slices into the heated oil.
The tomatoes should be crispy and golden brown after 2 to 3 minutes of cooking on each side.
After taking out of the skillet, drain the fried green tomatoes using paper towels to remove excess oil.Serve hot, garnished with a sprinkle of salt if desired.
