  • 1 cup heavy cream

  • 4 large egg yolks

  • Step 1: Preparing the Base
    In a saucepan, combine the milk and heavy cream. Heat the mixture over medium heat until it's warm but not boiling. Remove from heat and set aside.

    In a mixing bowl, whisk together the egg yolks and sugar until the mixture becomes pale and slightly thickened.S
    Slowly pour a small amount of the warm milk mixture into the egg mixture, whisking constantly. This step, known as tempering, prevents the eggs from scrambling.
  • Step 3: Combining and Cooking
    Gradually pour the tempered egg mixture back into the saucepan with the remaining milk mixture.
    Cook over medium heat, stirring constantly with a wooden spoon. The mixture will thicken and coat the back of the spoon.
  • Step 4: Infusing Flavor
    Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt. This is where the magic of flavor comes to life!

    Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming.
    Chill in the refrigerator for at least 4 hours or until thoroughly cold.Once chilled, follow your ice cream maker's instructions to churn the mixture into creamy gelato perfection. This usually takes about 20-25 minutes.

    Transfer the churned gelato into an airtight container and freeze for an additional 2-3 hours to firm up.Scoop into bowls or cones, and enjoy the creamy goodness!
