- 2 pounds of Russet potatoes
- 1 1/2 cups all-purpose flour
- 1 large egg
- Salt, to taste
Start by boiling the unpeeled potatoes until they're tender. Once done, peel and mash or rice them, allowing them to cool.
In a large mixing bowl, combine the mashed potatoes with flour, a beaten egg, and a pinch of salt. Mix until a soft dough forms.
On a floured surface, roll the dough into ropes, then cut them into bite-sized pieces. Optional: Use a gnocchi board or fork to create those classic ridges.
Drop the gnocchi into a pot of boiling salted water. Once they float to the surface, scoop them out and they're ready to go!
