Ingredients
  

For the Base:

  • 3 cups tortilla chips (or corn chips)

Protein Layer (choose one):

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning OR 2 cups cooked black beans (for a vegetarian option)

Toppings (choose your favorites):

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup diced onions
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • ½ cup sliced black olives
  • 1 avocado, diced
  • 1 cup salsa or pico de gallo
  • ½ cup canned corn (optional)
  • ¼ cup chopped cilantro (optional)

Instructions
 

  • Spread a layer of tortilla or corn chips on a large plate or platter. This will serve as the foundation of your haystacks.
  • If using ground beef or turkey, heat a large skillet over medium heat. Add the ground meat and cook until browned, breaking it up with a wooden spoon.
  • Drain excess grease and add the taco seasoning according to package instructions. Stir to coat the meat evenly. Set aside.
  • For the vegetarian option, heat black beans in a small pot over low heat with a pinch of cumin and garlic powder for added flavor.
  • Prep the Toppings
    Wash and chop all your fresh vegetables: lettuce, tomatoes, onions, and avocado.
  • Shred the cheese, if needed.
  • Place all toppings into individual bowls for easy assembly.
  • Assemble the Haystacks:
    Start by spooning the cooked protein or beans over the layer of chips.
  • Add shredded lettuce as the next layer, followed by diced tomatoes, onions, and cheese.
  • Continue layering with your chosen toppings, such as sour cream, salsa, olives, and avocado.
  • Finish with a sprinkle of fresh cilantro for garnish, if desired.
