- Corn tortillas – 4 (you can substitute with flour tortillas if preferred)
- Eggs – 4 large
- Refried beans – 1 cup (canned or homemade)
- Tomatoes – 2 medium, diced
- Jalapeño pepper – 1, finely chopped (optional for extra spice)
- Garlic – 1 clove, minced
- Cilantro – 2 tablespoons, chopped
- Avocado – 1, sliced (for garnish, optional)
- Salt and pepper – to taste
- Olive oil – 2 tablespoons (or vegetable oil)
- Cheese – Queso fresco or crumbled feta (optional for topping)
- Onion – 1 small, diced
Prepare the SalsaHeat 1 tablespoon of olive oil in a small saucepan over medium heat. Add the diced onion, jalapeño, and garlic, cooking until the onion is soft and translucent (about 2–3 minutes). Add the diced tomatoes, season with salt and pepper, and let it cook for another 5–7 minutes, stirring occasionally. The tomatoes should soften and create a chunky salsa. Remove from heat, stir in chopped cilantro, and set aside.
Prepare the TortillasIn a skillet, heat a small amount of olive oil over medium heat. Place each tortilla in the skillet one at a time, warming each side for about 30 seconds. The tortillas should be soft but slightly crisped on the edges. Once warmed, set the tortillas aside on your serving plates.
Cook the EggsUsing the same skillet, add a little more oil if needed, then crack each egg into the pan. Fry them to your preferred doneness; sunny-side-up is traditional for Huevos Rancheros, so the yolks remain runny. Season with salt and pepper while cooking, and once the eggs are ready, remove them from the pan.
Assemble the Huevos RancherosSpread a layer of refried beans on each tortilla. Place a fried egg on top of each tortilla with beans, then spoon some of the freshly made salsa over the eggs.
Optionally, add avocado slices and sprinkle cheese on top for added flavor.
Serve and GarnishAdd extra cilantro, more salsa, or even hot sauce if you like it spicier. Serve the Huevos Rancheros warm and enjoy immediately.
