Ice cream cakes trace their roots to the Renaissance era in Europe, where they were known as "bombes." These layered desserts combined ice cream and fruit encased in a thin sponge cake layer. Over the years, they’ve evolved into the modern versions we love today, featuring creative combinations of flavors, decorations, and layers.

  • Plastic wrap or parchment paper

Ingredients
  

  • Cake Layer: 1 box of your favorite cake mix (or prepare a homemade sponge cake)
  • Ingredients listed on the cake mix box (usually eggs, oil, and water)
  • Ice Cream Layer: 1.5 liters of ice cream (choose your favorite flavor or mix two!)

    Optional: Chocolate chips, nuts, or crushed cookies for added texture

  • Frosting and Decoration:

    2 cups whipped cream or frosting of choice

  • Sprinkles, chocolate syrup, or fresh fruits for garnish

Instructions
 

  • Preheat your oven to the temperature indicated on the cake mix box.
  • Grease and flour your cake pan.
  • Prepare the cake batter according to the package or your recipe.
  • Pour the batter into the pan and bake as directed.
  • Allow the cake to cool completely.
  • Let the ice cream sit out for 10–15 minutes to soften.
  • Line another cake pan (same size as the first) with plastic wrap.
  • Scoop the softened ice cream into the pan and spread it evenly.
  • Press in optional mix-ins like chocolate chips or crushed cookies if desired.
  • Cover with plastic wrap and freeze for at least 4 hours.
  • Once the cake and ice cream layers are fully cooled and frozen, place the cake layer on a flat surface.
  • Gently remove the ice cream layer from its pan and place it on top of the cake.
  • Smooth the edges with a spatula for a clean finish.
  • Spread whipped cream or frosting over the top and sides of the cake.
  • Decorate with sprinkles, chocolate syrup, or fresh fruits.
  • Freeze the assembled cake for at least 2 more hours.
  • Remove the cake from the freezer 10 minutes before serving to soften slightly.
  • Slice with a sharp knife, serve, and watch the smiles unfold!
