Ingredients
  

For the Cake:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 3 large eggs
  • 1/2 cup granulated erythritol or your preferred keto sweetener
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract

For the Filling:

  • 1/2 cup heavy cream
  • 2 tbsp powdered erythritol
  • 1/4 cup unsweetened cocoa powder (for a chocolate poke cake) or sugar-free strawberry syrup (for a fruity variation)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract

Instructions
 

  • Step 1: Preheat the Oven and Prepare the Pan
    Preheat your oven to 350°F (175°C).
    Grease a 9x9-inch baking pan with butter or line it with parchment paper.
  • Step 2: Prepare the Cake Batter
    In a mixing bowl, combine almond flour, coconut flour, baking powder, baking soda, and salt.
    In a separate bowl, whisk together melted butter, eggs, erythritol, almond milk, and vanilla extract until smooth.
    Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter forms.
  • Step 3: Bake the Cake
    Pour the batter into the prepared pan and spread it evenly.
    Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
    Allow the cake to cool for 10-15 minutes.
  • Step 4: Poke and Fill
    Once the cake has cooled slightly, use a toothpick or wooden skewer to poke holes evenly across the surface.
    For the filling, whisk together heavy cream, powdered erythritol, and cocoa powder or sugar-free syrup. Gently pour the filling over the cake, ensuring it seeps into the holes.
    Let the cake absorb the filling for 10 minutes.
  • Step 5: Add the Topping
    In a clean bowl, whip the heavy cream, powdered erythritol, and vanilla extract until stiff peaks form.
    Spread the whipped cream evenly over the top of the cake.
  • Step 6: Chill and Serve
    Refrigerate the cake for at least 15 minutes to allow the flavors to meld.
    Slice into 9 squares and serve chilled.
