Marinate the lamb chops first in the preparation process. Combine olive oil, salt, pepper, rosemary, thyme, and minced garlic in a bowl.
The lamb chops should be evenly coated with this mixture on both sides. Marinate them for at least half an hour.
Pre-heat your grill or broiler before grilling or broiling. For medium-rare, grill the lamb chops for 3–4 minutes on each side; adjust the cooking time according to your preferred doneness.
Basting: To retain the juice and intensify the flavors of the marinade, bast the chops with a basting brush while they are grilling.
