- 1 pound ground Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup lasagna noodles, broken into small pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
- Olive oil, for cooking
In a big pot, warm up one tablespoon of olive oil over medium heat. Using a wooden spoon, break up the ground Italian sausage while it cooks until it turns brown.
Cook the chopped onion in the pot for three to four minutes, or until it becomes transparent.
Cook for a further minute after adding the minced garlic.Add the chopped tomatoes, tomato sauce, chicken broth, salt, black pepper, dried oregano, and dried basil.
Mix everything together.Add the broken lasagna noodles to the broth and bring it to a simmer.
Cook the noodles for ten to twelve minutes, or until they are soft. Once melted and thoroughly mixed, mix in half of the shredded mozzarella cheese and half of the grated Parmesan cheese.
Spoon the soup into bowls for serving.
