Ingredients
  

  • 1 pre-made pie crust (or make your own from scratch)
  • 4-5 Meyer lemons (you'll need both zest and juice)
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Roll out your pie crust and press it into a 9-inch pie dish. You can crimp the edges for a decorative touch.
  • In a mixing bowl, whisk together the sugar, melted butter, and salt until well combined.
  • Zest two of the Meyer lemons and add the zest to the sugar mixture. This will infuse your pie with that amazing citrus aroma.
  • Juice all the Meyer lemons to get about ¾ cup of juice.
  • Beat the eggs and add them to the sugar mixture, followed by the lemon juice and vanilla extract. Mix until smooth and well incorporated.
  • Pour the lemon filling into the pie crust.
  • Carefully place the pie in the preheated oven and bake for about 30-35 minutes, or until the filling is set and the top is golden brown.
  • Once done, remove the pie from the oven and let it cool on a wire rack before serving.
