Preheat your oven to 350°F (175°C).
Roll out your pie crust and press it into a 9-inch pie dish. You can crimp the edges for a decorative touch.
In a mixing bowl, whisk together the sugar, melted butter, and salt until well combined.
Zest two of the Meyer lemons and add the zest to the sugar mixture. This will infuse your pie with that amazing citrus aroma.
Juice all the Meyer lemons to get about ¾ cup of juice.
Beat the eggs and add them to the sugar mixture, followed by the lemon juice and vanilla extract. Mix until smooth and well incorporated.
Pour the lemon filling into the pie crust.
Carefully place the pie in the preheated oven and bake for about 30-35 minutes, or until the filling is set and the top is golden brown.
Once done, remove the pie from the oven and let it cool on a wire rack before serving.
