- 4 butterfish fillets
 - 1/3 cup miso paste (white or red)
 - 2 tablespoons unsalted butter
 - 2 tablespoons mirin
 - 1 tablespoon sake
 - 1 tablespoon sugar
 - 1 teaspoon soy sauce
 - Sesame seeds and chopped green onions for garnish

Preheat the oven: Set it to 400°F (200°C).
Prepare the miso glaze: In a bowl, combine miso paste, mirin, sake, sugar, and soy sauce. Whisk until smooth.
Marinate the fish: Brush the butterfish fillets with the miso glaze, ensuring an even coating.
Bake to perfection: Place the fillets on a baking sheet and bake for 15-18 minutes, or until the fish flakes easily with a fork.
Butter it up: While baking, melt butter in a pan. Once the fish is done, drizzle it with the melted butter for that extra indulgence.
Garnish and serve: Sprinkle sesame seeds and chopped green onions on top. Serve with steamed rice or your favorite side.
