Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup roasted peanuts
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt

Instructions
 

  • Prepare the Pan: Spray the parchment-lined baking sheet with non-stick cooking spray and set aside.
  • Combine Ingredients: In the saucepan, combine sugar, corn syrup, and water. Stir over medium heat until the sugar dissolves.
  • Cook Syrup: Insert the candy thermometer into the mixture and cook without stirring until it reaches 280°F (soft-crack stage).
  • Add Peanuts and Butter: Stir in the roasted peanuts and butter. Continue cooking and stirring until the temperature reaches 300°F (hard-crack stage).
  • Add Vanilla and Baking Soda: Remove the saucepan from heat. Quickly stir in vanilla extract, baking soda, and a pinch of salt. The mixture will foam up.
  • Pour and Spread: Immediately pour the hot mixture onto the prepared baking sheet. Use the wooden spoon or spatula to spread it into an even layer.
  • Cool and Break: Allow the peanut brittle to cool completely at room temperature until hardened. Once cooled, break it into bite-sized pieces.
