  • 4-5 ripe peaches
  • 1 cup white vinegar
  • 1 cup granulated sugar
  • 1 cinnamon stick
  • 4-5 whole cloves
  • 1-inch piece of fresh ginger
  • 1/2 teaspoon allspice berries
  • 1/2 teaspoon black peppercorns

Instructions
 

  • Step 1:
    Start by blanching the peaches in boiling water for about 30 seconds.Remove them from the boiling water and immediately transfer them to a bowl of ice water.
  • The skins should now peel off easily. Peel the peaches and remove the pits. Cut them into halves or quarters, depending on your preference.
  • Step 2:
    In a large saucepan, combine white vinegar, sugar, cinnamon stick, cloves, ginger, allspice berries, and black peppercorns.Stir the mixture and bring it to a gentle boil.
  • Step 3:
    Add the peeled and pitted peaches to the boiling pickling solution.Let the peaches simmer for about 5-7 minutes or until they become tender but not too soft.Remove the peaches from the heat and let them cool in the pickling liquid.
  • Step 4:
    Once the peaches have cooled, transfer them along with the pickling liquid to sterilized jars.Seal the jars tightly, and your pickled peaches are ready to be stored for later use.
