Ingredients
  

  • 1 cup coarse yellow cornmeal
  • 4 cups water or broth
  • Salt to taste
  • Optional: butter, cheese, herbs, or other flavorings

Instructions
 

  • In a medium saucepan, bring the water or broth to a boil.
  • Gradually whisk in the cornmeal, stirring constantly to prevent lumps from forming.
  • Reduce heat to low and simmer, stirring frequently, until the polenta thickens and pulls away from the sides of the pan, about 30-40 minutes.
  • Season with salt to taste and add any desired flavorings, such as butter or cheese.
  • Serve immediately as a creamy porridge or pour the polenta into a greased dish to set and cool for slicing and grilling.
