- 1 cup coarse yellow cornmeal
 - 4 cups water or broth
 - Salt to taste
 - Optional: butter, cheese, herbs, or other flavorings
 
 
In a medium saucepan, bring the water or broth to a boil.
Gradually whisk in the cornmeal, stirring constantly to prevent lumps from forming.
Reduce heat to low and simmer, stirring frequently, until the polenta thickens and pulls away from the sides of the pan, about 30-40 minutes.
Season with salt to taste and add any desired flavorings, such as butter or cheese.
Serve immediately as a creamy porridge or pour the polenta into a greased dish to set and cool for slicing and grilling.
