Ingredients
  

  • 2 pounds of potatoes (preferably Yukon Gold)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

  • Start by washing and peeling the potatoes. Now, cut them into bite sized pieces.
  • Boil the potatoes till they're soft but still a bit firm. Use a fork to check for the softness. Then take it off the heat, drain and allow to cool.
  • In a large mixing bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
  • Add the cooled potatoes, celery, red onion, and parsley to the bowl. Gently fold the ingredients until well combined.
  • Next. chill the potatoes and the mixed salad in the fridge to cool for at least 30 minutes. It's ready to be served.
