- 2 pounds of potatoes (preferably Yukon Gold)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Start by washing and peeling the potatoes. Now, cut them into bite sized pieces.
Boil the potatoes till they're soft but still a bit firm. Use a fork to check for the softness. Then take it off the heat, drain and allow to cool.
In a large mixing bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
Add the cooled potatoes, celery, red onion, and parsley to the bowl. Gently fold the ingredients until well combined.
Next. chill the potatoes and the mixed salad in the fridge to cool for at least 30 minutes. It's ready to be served.
