Ingredients
  

  • 6 medium-sized potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • ½ cup sour cream
  • 4 slices of bacon, cooked and crumbled (optional)
  • 2 tablespoons butter
  • 2 stalks of celery, chopped
  • 1 carrot, diced (optional for added sweetness)
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese (optional for garnish)
  • 2 green onions, sliced (for garnish)

Instructions
 

  • Prepare the Ingredients:
    Peel and dice the potatoes into small cubes for even cooking. Chop the onion, celery, and carrot (if using). Mince the garlic.
  • Cook the Aromatics:
    In a large soup pot, melt the butter over medium heat. Add the chopped onion, celery, carrot, and garlic. Cook until the vegetables soften, about 5 minutes.
  • Add Potatoes and Broth:
    Stir in the diced potatoes and dried thyme. Pour in the chicken or vegetable broth, ensuring the potatoes are fully submerged. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are fork-tender.
  • Mash or Blend the Soup:
    Use a potato masher to lightly mash the potatoes for a chunky texture. For a smoother soup, use an immersion blender to puree the mixture directly in the pot.
  • Incorporate the Cream:
    Stir in the heavy cream and sour cream. Heat gently for 5 minutes, but do not let the soup boil.
  • Season to Taste:
    Add salt and black pepper to taste. Adjust seasoning as needed.
  • Add Toppings and Serve:
    Ladle the soup into bowls. Garnish with crumbled bacon, shredded cheddar cheese, and sliced green onions. Serve warm with crusty bread or crackers.
