Dissolve yeast and sugar in warm water, let it sit for 5 minutes until foamy.
In a large bowl, mix flour and salt. Add yeast mixture and knead until smooth.
Cover the dough and let it rise in a warm place for about an hour.
Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
Divide dough into equal portions and roll each into a long rope. Twist into pretzel shapes.
Dip each pretzel in the beaten egg, place on the baking sheet, and sprinkle with coarse salt.
Let the pretzels rest for 15 minutes, then bake for 12-15 minutes until golden brown.
Cool on a wire rack before serving.
