For 6 medium-sized pancakes (2 servings):
- 1 cup rolled oats (or oat flour)
- 1 scoop (about 30g) protein powder (vanilla or unflavored)
- 1 large ripe banana
- 2 large eggs
- ½ cup unsweetened almond milk (or any milk of choice)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
- 1 teaspoon coconut oil or non-stick spray (for cooking)
Optional toppings:
- Fresh fruits (berries, bananas)
- Honey or maple syrup
- Peanut butter or almond butter
- Greek yogurt
Prepare Your BatterAdd the rolled oats to a blender and pulse until you get a fine, flour-like consistency. Toss in the banana, eggs, protein powder, almond milk, baking powder, vanilla extract, and a pinch of salt. Blend everything together until smooth. Let the batter rest for a couple of minutes.
Heat Your SkilletHeat a non-stick skillet over medium heat and lightly grease it with coconut oil or a non-stick spray.
