Ingredients
  

  • 1 cup canned pumpkin puree
  • 1 egg
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Instructions
 

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
  • Beat in the egg, then add the pumpkin puree and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, ground cinnamon, nutmeg, cloves, salt, and baking soda.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • Once baked, remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
