  • 1 lb (450g) of processed cheese (Velveeta or American cheese)
  • 1 can (10 oz) of diced tomatoes with green chilies (like Rotel)
  • 1/2 cup of milk or heavy cream (adjust for consistency)
  • 1 tablespoon of butter
  • 1 small onion, finely chopped
  • 1-2 jalapeños, finely diced (optional for spice)
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional for added depth)
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)

Instructions
 

  • Prepare the Ingredients
    Start by chopping the onion and jalapeños finely. If you prefer a milder dip, remove the seeds from the jalapeños before dicing. Set all ingredients aside for easy access while cooking.
  • Step 2: Sauté the Aromatics
    In a medium saucepan, melt the butter over medium heat. Add the chopped onions and sauté for 2-3 minutes until they become translucent. If you're using jalapeños, toss them in now and sauté for another 1-2 minutes.
  • Step 3: Melt the Cheese
    Lower the heat to medium-low. Add the processed cheese, either cubed or shredded, to the saucepan. Stir frequently to prevent burning, allowing the cheese to slowly melt into a smooth consistency.
  • Step 4: Add the Tomatoes and Milk
    Once the cheese has melted, add the can of diced tomatoes with green chilies (including the juice). Stir in the milk or heavy cream gradually, adjusting the amount based on your desired thickness. Keep stirring until the mixture is smooth and creamy.
  • Step 5: Season the Dip
    Add cumin, garlic powder, smoked paprika, salt, and pepper to the queso dip. Stir everything together until well combined, and let the dip cook for another 2-3 minutes to allow the flavors to meld.
  • Step 6: Serve and Garnish
    Remove the queso dip from heat and pour it into a serving dish. Garnish with freshly chopped cilantro, if desired. Serve the dip immediately with tortilla chips, veggie sticks, or any other dippable items you enjoy!
