Ingredients
  

  • 1 cup red kidney beans (dry)
  • 1 pound smoked sausage, sliced
  • 1 large onion, finely chopped
  • 1 bell pepper, diced
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups cooked white rice

Instructions
 

  • Start by rinsing the dry beans and soaking them overnight in a large bowl of water.
  • In a Dutch oven, brown the sliced sausage over medium heat. Remove and set aside.
  • Next, In the same pot, sauté onions, bell peppers, celery, and garlic until tender.
  • Add soaked and drained beans, bay leaves, thyme, smoked paprika, salt, and pepper to the pot.
  • Pour enough water to cover the ingredients and simmer for 2-3 hours or until beans are tender.
  • Serve the red beans mixture over a bed of cooked white rice.
