- 1 cup red kidney beans (dry)
- 1 pound smoked sausage, sliced
- 1 large onion, finely chopped
- 1 bell pepper, diced
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 cups cooked white rice
Start by rinsing the dry beans and soaking them overnight in a large bowl of water.
In a Dutch oven, brown the sliced sausage over medium heat. Remove and set aside.
Next, In the same pot, sauté onions, bell peppers, celery, and garlic until tender.
Add soaked and drained beans, bay leaves, thyme, smoked paprika, salt, and pepper to the pot.
Pour enough water to cover the ingredients and simmer for 2-3 hours or until beans are tender.
Serve the red beans mixture over a bed of cooked white rice.
