Ingredients
  

  • 1 cup stone-ground grits
  • 1 pound fresh shrimp, peeled and deveined
  • 4 cups chicken broth
  • 1 cup cheddar cheese, shredded
  • 1/2 cup green onions, chopped
  • 4 slices bacon, chopped
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions
 

  • In a medium saucepan, bring the chicken broth to a boil.
  • Gradually whisk in the grits, reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
  • While the grits are cooking, fry the bacon in a large skillet until crispy. Remove bacon and set aside.
  • In the same skillet, add the shrimp and cook until pink, usually 2-3 minutes per side.
  • Stir the cheese, cream, butter, and green onions into the cooked grits until creamy.
  • Serve the shrimp over the cheesy grits, topped with the crispy bacon.
