- 2 lbs (about 900g) baby potatoes
- 2-3 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: chopped fresh herbs (such as parsley or chives), grated cheese, crispy bacon bits, sour cream, or salsa
Preheat your oven to 425°F (220°C).
Place the baby potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat and cook for about 15-20 minutes, or until the potatoes are fork-tender.
Drain the potatoes and let them cool slightly.
Place the cooked potatoes on a baking sheet lined with parchment paper. Use a potato masher or fork to gently smash each potato until it's about ½ inch thick.
Drizzle olive oil over the smashed potatoes and season with salt and pepper to taste.
