Ingredients
  

  • 2 lbs (about 900g) baby potatoes
  • 2-3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped fresh herbs (such as parsley or chives), grated cheese, crispy bacon bits, sour cream, or salsa

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Place the baby potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat and cook for about 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes and let them cool slightly.
  • Place the cooked potatoes on a baking sheet lined with parchment paper. Use a potato masher or fork to gently smash each potato until it's about ½ inch thick.
  • Drizzle olive oil over the smashed potatoes and season with salt and pepper to taste.
  • Bake in the preheated oven for 25-30 minutes, or until golden and crispy.
  • Once baked, remove the potatoes from the oven and sprinkle with your choice of toppings.
  • Serve hot and enjoy the crispy goodness of smashed potatoes!
