Ingredients
  

For the Steak Marinade

  • 1 lb (450 g) flank steak or skirt steak
  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice (about 2 limes)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Tacos

  • 8 small corn or flour tortillas
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco or feta cheese
  • Lime wedges for serving

Instructions
 

  • Marinate the Steak
    In a mixing bowl, whisk together olive oil, lime juice, garlic, cumin, paprika, chili powder, salt, and pepper.
  • Place the steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it’s well-coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 4-24 hours for maximum flavor.
  • Prepare the Toppings
    Chop cilantro and red onion. Slice avocado and set aside.
  • Crumble the queso fresco or feta cheese.
  • Cook the Steak
    Heat a cast-iron skillet or grill pan over medium-high heat. Add a drizzle of oil if needed.
  • Remove the steak from the marinade and pat it dry with paper towels to ensure a good sear.
  • Cook the steak for 3-4 minutes per side for medium-rare, or adjust based on your preferred doneness.
  • Transfer the steak to a cutting board and let it rest for 5 minutes.
  • Warm the Tortillas
    Heat tortillas in a dry skillet for 30 seconds per side or wrap them in foil and warm in a low oven.
  • Assemble the Tacos
    Thinly slice the rested steak against the grain to ensure tenderness.
  • Place a few slices of steak in each tortilla.
  • Top with cilantro, red onion, avocado slices, and queso fresco.
  • Serve with lime wedges for a zesty finish.
