Steak tacos, or "tacos de carne asada," specifically, originate from the northern regions of Mexico, where grilling and beef are integral to the culinary culture.

Ingredients
  

For the Steak Marinade:

  • 1 lb (450 g) skirt steak or flank steak
  • 3 tbsp olive oil
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup chopped fresh cilantro (optional)

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup diced tomatoes
  • ½ cup diced red onion
  • 1 cup chopped fresh lettuce
  • ½ cup crumbled queso fresco or shredded cheddar cheese
  • ¼ cup sour cream or Greek yogurt
  • 1 lime, cut into wedges
  • Optional toppings: sliced jalapeños, guacamole, salsa

Instructions
 

  • Marinate the Steak
    In a mixing bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir well to create the marinade.
    Place the steak in the bowl and ensure it’s evenly coated. Add chopped cilantro if desired.
    Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavor).
  • Prepare the Toppings
    While the steak marinates, chop the tomatoes, red onion, lettuce, and any other desired toppings.
    Warm the tortillas in a dry skillet or microwave. Keep them covered with a clean kitchen towel to stay warm.
  • Cook the Steak
    Heat your grill, grill pan, or skillet over medium-high heat.
    Cook the steak for about 4-6 minutes on each side, depending on the thickness and desired doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).
    Remove the steak from the heat and let it rest for 5 minutes, loosely covered with foil.
  • Assemble the Tacos
    Slice the rested steak thinly against the grain.
    Place slices of steak onto each tortilla.
    Add your preferred toppings: tomatoes, onions, lettuce, cheese, sour cream, and optional extras like jalapeños or guacamole.
    Squeeze a wedge of lime over each taco for a burst of citrus flavor.
  • Serve and Enjoy!Serve the tacos immediately while the steak is juicy and warm. Pair with a side of rice, beans, or tortilla chips for a complete meal.
