- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 teaspoon salt
Rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.
Combine rice and water in a rice cooker or pot. Cook according to the manufacturer's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes.
While the rice cooks, combine rice vinegar, sugar, and salt in a saucepan. Heat over low heat until the sugar dissolves, then remove from heat and let it cool.
Once the rice is cooked, transfer it to a large mixing bowl. Gently fold in the vinegar mixture using a wooden or plastic rice paddle, being careful not to smash the grains.
Spread the seasoned rice onto a baking sheet or large plate, then fan it to cool to room temperature.
